Cooking Salmon With Skin On Grill Pan
Cook skin side up 5 minutes.
Cooking salmon with skin on grill pan. If you are using skin on salmon put the pink meat y side down first and cook for about 4 to 5 minutes. Combine 1 teaspoon each salt and pepper. Use an egg flipper or a flat saucepan lid to press the salmon firmly down into the pan to stop it from curling up.
Place the fish into the pan. Heat to medium high and sprinkle with remaining salt and pepper over top. Sprinkle half of salt and pepper mixture in bottom of a large nonstick skillet.
Cover and chill 5 minutes. Remove fillets from marinade. Spray a grill pan with non stick cooking spray and allow it to heat over medium high heat for two minutes or so until it is hot.
Remove the fillet from the refrigerator and place it on a baking sheet. Heat sesame oil in large skillet over medium high heat. Preheat your gas grill or light a medium hot charcoal fire 350 375 degrees f.
Heat a good sized frying pan over medium heat add the vegetable oil and when hot place the fish skin side down in the pan. Arrange salmon skin side down in skillet. Place salmon fillets in a shallow dish and pour marinade over top.
I like to do the presentation side down first. When ignited and heated put the grill cover on for about 15 minutes with the cooking grate. Turn and coat with reserved marinade.
