Combine the rice water salt and butter if using in a medium saucepan and bring to a simmer uncovered over medium high heat. Rinse the rice in a mesh strainer if you aren t in the mood skip it. Over high heat combine rice and water and bring to a boil.
Reduce heat to low and simmer covered until the rice is tender and most of the liquid has been absorbed 40 to 45 minutes. Reduce the heat so that the rice stays at a low simmer and cover the pot. Simmer without lifting the lid of the pot for 45 minutes.
Let stand 5 minutes then fluff with a fork. Add the rice to the boiling water. Cook for 30 mins then turn off the heat.
