Beetroot can be cut into shoe strings sprayed with a little olive and seasoned before cooking at 200c for a healthy take on french fries or you can roast beetroot in the oven if you want to keep. Wash the beets thoroughly. Carefully wash the fresh beetroots under cold running water and pat dry with paper towels.
Drain and leave to cool slightly. Don t be afraid to be generous with salt it brings out the flavour of the beetroot while balancing its earthy taste. Or simply squeeze some lemon juice over roast beetroot wedges sprinkle with sea salt and chopped parsley and enjoy as a side dish.
