Put in a pan with cold water to cover.

Wrap each in aluminum foil. Roast on a sheet pan for 45 to 90 minutes depending on. Roast for 50 to 60 minutes.
Bring to the boil reduce the heat and simmer for 30 minutes until the beetroot is tender to the tip of a table knife. Place the wrapped beets on a rimmed baking sheet to catch drips in case the beet juices leak. Heat oven to 400 degrees.
Leave the lid off while you re boiling the beetroot. Check the beets every 20 minutes or so.
