Let the roast continue to roast for another 20 25 minutes per pound of meat around 100 minutes or until the internal temperature reaches 140 f when a meat thermometer is inserted into the middle. Place pork roast fat side up into large roasting pan with 1 cup water in the bottom. Once cooked let the roast rest for 10 minutes before slicing.
Roast for 15 minutes then lower heat to 375 degrees f and continue roasting until the meat thermometer reads 145 degrees f. Preheat the oven to 350 and cook roast for 2 hours at 350 and 3 and 1 2 hours at 325 degrees f. If you want a quick and easy roast a piece of the pork fillet will roast in 30 40 minutes.
