The fish will be ready to flip when it easily releases from the pan. As the fish cooks and relaxes stop pressing down and leave to cook on high without moving. Add the oil to the pan and bring it almost to smoking point.
Add a little oil and panfry the fillets skin side down until the skin is crispy and golden brown. Transfer to a plate using a broad spatula. Turn fillets over and finish cooking.
After 2 3 minutes or when the skin is crisp and golden season with salt and flip the fillets. Salt the skin side of the fish. Heat olive oil and canola oil in a skillet over medium heat.
