Reduce oven to 180 c 160 c fan forced and roast uncovered for a further 1 hours or until pork is tender and cooked through and rind is crisp.
This can be easily tested by piercing the flesh with a knife remove the pork from the oven then leave to rest for 10 15 minutes before carving. You can check the juices by piercing the meat with a skewer. Once cooked the pork should be tender.
Rest pork uncovered for 15 minutes.
