Press the fillet against the skillet with your fish spatula and turn the heat down. Arrange the salmon fillets on a lined baking tray skin side down and top with finely chopped garlic fresh herbs and a drizzle of olive oil. Give it some high heat for about 3 minutes until the skin is crispy.
