How To Cook A Pork Pot Roast In A Pressure Cooker

Place the trivet or an oven proof rack in the pressure cooker. When hot sear roast on top side fat side first for three minutes. Deglaze the pan with a half cup of water stirring to get up all the flavorful cooked on brown juices then pour the liquid back into a measuring cup.
Lock the lid in place and bring the cooker up to high pressure. Return the meat to the pressure cooker and add the onion water or broth and the apple cider. Place the rack in the pressure cooker.
In the pressure cooker heat oil over medium high heat. Let the pressure come down naturally about 20 more minutes. Add water and put the lid on the pot and reduce heat to medium low heat.
Allow the pressure to come down naturally then carefully remove the lid. Add the sliced pork shoulder with all the meat juice in instant pot. Flip and sear for 3 more minutes on bottom.
Sprinkle the remaining onion over the roast. Add the diced tomatoes carrots and sliced apple on top of the pork. Season with salt pepper and herbs then add the onion tomatoes and mushrooms with juice.
