Heat olive oil and canola oil in a skillet over medium heat.

Heat a fry pan on the stove adding a small amount of oil after a minute or so. Cook until lightly golden in color 3 to 4 minutes per side. Pat the barramundi fillets dry with a paper towel and using a sharp knife lightly score the skin enough to go through the skin but not cut into the flesh.
Allow to cook in the hot oil without moving for about 3 minutes.
