In a heavy based frying pan on a medium to high heat add the grapeseed or vegetable oil and after a few seconds place the fillets in the pan skin side down. Season both sides with salt. When it s a nice caramel colour add the lemon juice and season.

Use paper towels to pat the barramundi fillets very dry being sure to remove as much moisture as possible. The edges should turn golden brown. Transfer to a plate using a broad spatula.
