How to cook halloumi asparagus. Toss the asparagus with tbsp oil season and spread out in a single layer. Put a griddle or frying pan over a high heat. Meanwhile snap the woody ends from the asparagus and cut the spears into 3 4cm lengths.
Brush asparagus and haloumi with olive oil and char grill turning occasionally until haloumi is golden and asparagus is tender 3 4 minutes. It s quick and the saltiness of the halloumi works well with the asparagus. Put the cheese and asparagus in separate dishes and pour 1 tablespoon of the oil over each.
Cook asparagus for 3 minutes then remove. Cook for 5 6 minutes in total turning occasionally until charred and just tender. Preheat a griddle pan over a high heat.
Scatter the ground peppercorns over each side of the cheese and a little salt over the asparagus. Mix the lemon juice with a pinch of sugar and whisk in 2 more tablespoons of the oil. Cook for 1 2 mins or until tender.
