Drain lamb from the marinade. Cook for 2 3 mins each side brushing with additional yogurt mix when turning. Remove from grill and rest in a warm place for 5 minutes.
Pour the juices from the resting plate over and season with freshly ground pepper. Remove the cutlets from the pan and leave to rest for 5 minutes before serving. Brush some of the mix over the cutlets on both sides and place on the grill tray make sure it s about 5cm below the grill.
Rub the cutlets with the marinade cover and set aside for 30 minutes to let the flavours infuse. Heat a griddle pan over a high heat until very hot. Heat a barbecue grill or chargrill over high heat.
Mix the yogurt into the leftover marinade and add 1 tsp salt.
