How to cook old beets. Fold foil around beets and crimp ends to form a packet. You may notice that for red beets the color leaks into the cooking liquid. Bring a large pot of water to a boil for approximately 20 30 minutes.
Cook covered on low 6 8 hours or until beets are tender. Place whole beets in a medium to large saucepan. Place beets peeled and cut into 1 2 inch wedges on a large piece of foil on a baking sheet.
Scrub the beets under cold water pat dry with a paper towel and place in a bowl. Place beets in a greased 4 qt. Preheat oven to 450 degrees.
Clean them cut off a bit of the top about a half inch and the same with the bottom then put them in foil put a bit of canola oil and salt on them wrap them tight put on a pan in preheated 400 degree f oven for about one hour check at 45 minutes then cook as needed 15 45 minutes more. Top with a tightly fitted lid. Fill with cold water until the beets are submerged halfway.
Bake for 1 hour for large beets or about 45 min for medium. Concentrate the sweet flavor of beets by cooking em low and slow. Some methods suggest to keep at least 2 inches of the stem intact and adding vinegar to the water to prevent this from occurring.
Add beets to pot. If using red and golden beets be sure to put them in separate pots or the red will dye the golden beets boil for 20 30 minutes depending on size of beets. Plus boiling beets lends a delicate sweet finish that s perfect for light recipes or people who find the taste of roasted beets too overpowering.
