How To Cook Roast Pork Knuckle

How to cook roast pork knuckle. Instructions pre heat your oven to 325f. The knuckle should slide off the fork without any resistance. To check if they are cooked insert a large meat fork into the meatiest part of the knuckle.
Remove knuckles from pan and leave to cool slightly. Put the roasting dish in the oven. Poke the skin of the pork knuckle a dozen times with a sharp knife.
Rub salt and pepper into the skin. Cook uncovered for 30 minutes then reduce the temperature to 180 c. Place the roast in a large roasting pan.
This will take between 45 minutes to an hour and a half depending on the size of the pork knuckles. Rub well into the scores as this not only seasons the meat but helps draw out moisture producing crispy crackling. Place the pork knuckle with skin side up on top.
