Season with salt pepper and lemon zest or juice. Once the cedar plank has been soaked prepare the salmon filets. Place the plank on the grill rack and allow it to preheat about 5 minutes or until it begins to crackle and smoke.
Check the filet after 20 minutes with an i grill thermometer. Place the salmon skin side down in a single layer on the cedar planks. Place soaked wood planks on the grill and heat it up for about 5 minutes.
