How to cook silver whiting. Use a slotted spoon to remove the fish from the oil and transfer to a plate lined with paper towel. When hot enough add the fillets to the pan skin side down and cook for about one minute. Season both sides of each fillet with salt and pepper.
Place the flour in a shallow dish. Dust fillets in flour seasoned with a little salt and pepper. Turn over and cook for a further minute.

Put the pan over high heat pour in enough clarified butter to cover the base of the pan and heat it to hot. Lay it in the pot with the bay leaf season with salt and pour in the milk. Carefully fry the silver whiting in batches of 4 for 3 minutes on each side or until golden and crisp.
