How To Cook Silverside Roast Beef
Preheat oven to 220 c.
How to cook silverside roast beef. In a small bowl combine mustard lemon juice marmalade garlic pepper and olive oil. Cover loosely with foil and allow it to rest for 15 20 minutes. Put the joint into a roasting tin and into the hot oven for 15 minutes to brown.
Rub the rolled silverside joint with the beef dripping and sprinkle with plenty of salt and pepper. Rinse silverside and place on roasting tray. Reduce heat to 150 degrees c and cook for 1 1 2 hours.
Brush silverside with mustard mixture. Place in oven and cook at 220 c for 10 minutes. Preheat the oven to 220 c.
When the beef is ready remove the tin from the oven and put the beef on a carving board. Reduce oven temperature to 140 c and roast for three hours. Cook in the oven for 30 minutes.
1 1 4 kg silverside corned beef. Place in the centre of the oven and roast for 20 minutes then reduce the temperature to 170 c for fan assisted or 180 c for ovens without a fan. Return meat to dish place remaining bay leaf on top of meat and cover.
Some even cook the piece of silverside with just a bottle of ginger beer. Arrange onion garlic and 1 bay leaf in the dish and sprinkle with salt and pepper. Continue roasting for 20 minutes per 500g reaching a core temperature of minimum 56 c for a medium rare roast.
