How to cook steak and kidney pie. Put onion steak and kidneys into a large casserole dish. In a large flameproof casserole dish or ceramic saucepan heat the butter and oil until the butter has melted. Pour over boiling water until meat is completely covered this will seal the meat.
Add the kidneys and cook for 1 2 minutes. Life out the meat and transfer to a large saucepan. Bring to the boil then cover reduce heat to low and simmer for 1 hr stirring occasionally.

Return the beef to the pan sprinkle flour over and coat the meat and onions add the stock. Keep the meat trimmings to make extra gravy to serve with the pie. Place in the pre heated oven for 2 hours.
Method heat the oil in a large casserole dish and cook the beef for 3 4 minutes until brown. Heat the remaining oil in the pan and fry the steak and kidney in batches until evenly browned. Set aside then brown the kidneys on both sides in the same pan.
