Simmer the vegetables in water for up to an hour.

Heat a large pot over medium heat. You should start to see it shimmer. Bring to a full boil.
Pour 4 quarts of water into the pot and turn the heat on high. Cover with water and bring to a simmer fill your stockpot with enough water to cover the vegetables by a few inches. Simmer for 45 minutes.
