How to make baked jerk salmon. Cut salmon into 4 6 oz portions and place in a 1 gallon ziplock bag. Put the jerk rubbed filets on a tray so they re not touching and freeze them an hour or two this freezes the rub onto the fish so it does not smear when you bag it then pop them in a zip top bag and keep in the freezer for up to one month. Using a sharp knife cut through the skin about 1 8 inch deep in 3 different places making sure not to cut all the way through to the flesh.
Line a baking sheet with foil. Mix jerk seasoning and tomato paste together. In a small mixing bowl whisk together spices olive oil and lime juice.
Rub all over fish and in between slits. Pour marinade over salmon seal bag and make sure the salmon is evenly coated in the marinade. Place salmon onto the prepared baking sheet and fold the sides of the foil over the salmon covering completely and sealing the packet closed.
Rinse salmon under water and pat dry with a paper towel. Remove skillet from oven and allow salmon to rest before serving 3 to 5 minutes. Place into oven and bake until cooked through about 18 20 minutes.
Place salmon on a cutting board skin side up. Bake salmon in the preheated oven until flesh flakes easily with a fork about 2 minutes.
