Pork Belly On A Spit
Cook on high 500 f or higher for a half an hour to 45 minutes until the pork belly is starting to brown.

As the fat from the pork starts to heat up fat will start to drip onto the charcoal which could cause a far fire.

You want the coals to be white hot when the pork goes on and this can take 20 30 minutes depending on the charcoal you are using. Skewer the roast in the middle with ozpig spit and spit roast over the fire until cooked through 3 4 hours or so depending on size. Getting the fire on at the right time is critical.
